Stable Structures: Removing the Bounded Size Requirement

@ielashi I am facing an issue migrating to the latest version of ic_stable_structures. Could you please provide guidance or suggestions around this:

Migrating to the latest version of ic_stable_structures panics due to max_size being greater than actual size of the struct.
